Chicken and Chilli Pasta

Watch point ? be sure to wash your hands with warm soapy water after preparing the chicken and wash the board and knife straight away.


1 chicken breast
2 teaspoons olive oil
? medium red onion
? teaspoon dried chilli flakes
1 clove garlic, crushed
? red pepper, sliced
100g mushrooms, sliced
?  courgette, sliced
100g pasta
50g grated Cheddar cheese

  1. Bring a large pan of lightly salted water to the boil.
  2. Trim the chicken breast and cut into strips about the size of a little finger.  Heat the oil in a frying pan, add the chicken breast and fry briskly until well browned.
  3. Cook the pasta for ten minutes until tender  but with a little ?bite?  in the centre. Drain.
  4. Add the onion to the pan with the chicken and fry for a few minutes until soft.  Add the chilli, garlic, pepper, mushrooms and courgette and season with a little salt and pepper.  Fry over a medium heat until the chicken is cooked through and the vegetables tender.
  5. Toss the chicken mixture together with the pasta and grated cheese.  Check for seasoning and serve straight away.
