Freshly Grated Parmesan CheeseParmesan Cheese

The flavour of home grated Parmesan Cheese is far superior to commercially prepared.  The cheese can be simply grated by hand or buy a special Parmesan blade for your food processor to whiz through a block in a minute.
 
Once grated Parmesan will keep, refrigerated, for three to four weeks. It is ready to pop into omelettes, scrambled eggs, pasta, risottos, and soups or to scatter with bread crumbs for gratins.
 
You can leave a little of the block in one piece to make Parmesan Shavings using a vegetable peeler.
